Plain (8 servings)
1 cup boiling water
1 tsp. +/- unflavored gelatin
1 tsp. vanilla extract
2 8 oz. cream or neufchatel (light) cheese (at room temperature!)
1.5 -2 cups bulk Splenda or liquid splenda equivalent
For flavor variety you may add: (use the extra 1/2 cup of splenda with these options)
2 oz. unsweetened bakers chocolate
-or- 1 oz unsweetened chocolate and 1 serving instant coffee crystals (tiramisu)
Heat water to boiling, dissolve gelatin (add chocolate and/or coffee) and add vanilla. Stir in splenda. Add cream cheese and use a mixer to blend smooth. Spray pie dish with pam and pour in mixture. Cover and refridgerate several hours or overnight before serving. Serve with whipped cream (unsweetened or splenda sweetened version) and dust with a little cocoa powder for the tiramisu version. Yummy and pretty!

Peach-Mango protein smoothie
Just made this up today for lunch and it's dee-lish!
1 scoop vanilla whey powder
1 cup Hood LC milk
2-3 Tbl. whipped cream
2/3 cup crushed ice
1 stick pk of peach-mango Crytal light green tea
Throw into the blender for a few seconds and enjoy!
